I have seen “healthy” versions of Shamrock Shakes (You know, the McDonald’s ones) floating all over the internet. I love ice cream, and in the olden days (like until last week), I was the first in line to try the seasonal, “limited time only” shakes or ice cream specialties at all my favorite fast food joints (namely Sonic, McDonald’s, and Dairy Queen). I knew that the closest I was going to get this year to the Shamrock Shake was if I made one myself.
So that’s what I did.
And it was so much better than I expected it to be.
It was so good that I think I will make another tomorrow.
With ALL the different recipes hanging out online, it was really hard to decide which one to try, but somehow I decided to base my shake
on this recipe.
After some small modifications, I ended up with this:
- 1 small, ripe avocado, skin and seed removed
- 1 3/4 C. almond milk
- 2 TBSP pure, raw honey (or sweetener of choice.)
- 1 TBSP + 1/2 tsp. vanilla extract
- 1/2 tsp. peppermint extract
- 1 C. ice
- 1 TBSP. “Enjoy Life” chocolate chips (gluten, dairy, soy, and nut free)
Put everything into a blender, blend for a few minutes, and enjoy!
|It actually turned out a lot greener than it looks in this picture.|
This shake is packed full of healthy fats and nutrients, making it a great breakfast on the go, or mid-day snack!
***Note: The chocolate chips are technically optional, but I think they add the perfect touch.***
***Another note: Although I used honey as my sweetener this time, next time (tomorrow) I will use something that will not cause a spike in blood sugar, such as liquid Stevia.
***Last note: I recommend using avocado as the base for this shake, both for the taste and the healthy fats it contains, but if you are concerned about calories (there are about 150 calories in a small avocado once you remove the seed and skin), you can swap the avocado for a medium, ripe, frozen banana.
Finally, happy Saint Patrick’s Day!!!
