Today is Tuesday. And I think Tuesday is the perfect day to share these absolutely perfect chocolate chip cookies with you. These taste delicious, and they are grain and dairy free. The first time I made these, I accidentally left out the melted coconut oil (still have no clue how that happened), and they still turned out really well! Andrew even gave them two thumbs up, and he is not a chocolate guy!
Find the original recipe here. The only change I made to the recipe is that I used raw honey instead of regular honey. Why? Because it is unrefined, contains small amounts of enzymes, minerals, and vitamins, and has a glycemic index of 30. All of these things make raw honey a great choice of sweetener for anyone, but especially for those of us with PCOS.

Of course, we still need to consume even raw honey only in moderation. Too much honey can raise our blood sugar levels and aggravate insulin resistance. The same is true for these cookies: We need to consume them in moderation, even though they
are so good, you are going to want to eat the whole batch in one sitting!
As a side note, I started my shots (for IVF) last night. I took Follistim and Menopur. The process was uneventful, and none of my fears came to fruition. I am excited to be moving forward, and so thankful for the way God has worked in our lives to make IVF possible for us. We sure serve an awesome God!!!
