Between Andrew’s being out of town all weekend, Audrey having some night-time sleeping issues, and Bonnie deciding she didn’t need to nap this weekend, there wasn’t much time for meal planning or prepping. And honestly, I didn’t make it the priority that I probably should have. We also spent more money last week than usual (gas in the cars, getting the oil in our vehicles changed, Andrew’s hotel and meals over the weekend,) so we didn’t have much of a grocery budget.
All these things mean this week’s menu is a little pathetic. But it is sufficient, and we are thankful!
Monday: Garlic and rosemary quinoa blend (Aldi sells this) with turkey sausage and roasted broccoli
Tuesday: Spaghetti squash chow mein
Wednesday: Out. Probably Chick fil a. Because we go to church on Wednesdays, and I have been working at the office with Andrew on Wednesdays, so dinner at home is a bit tricky.
Thursday: Sweet potato wedges. We have lots of sweet potatoes to get rid of. This is kind of a pitiful meal in terms of variety, but at least they taste amazing!
Friday: Breakfast for dinner! Pancakes, scrambled eggs, and bacon. My faves. We have leftover pancake mix from last week, so these will be a breeze this time around!
Saturday: Avocado and egg toast for Bonnie and me. This is another favorite, affordable meal of mine. Quinoa salad for Andrew, because he doesn’t tend to like having breakfast for dinner more than one day per week. For the life of me, I can’t figure out why.
As far as actual breakfasts go, we have oatmeal, frozen fruit for smoothies, and blueberry muffins that just need to be thawed.
I will be very happy to go to the grocery store at the end of the week!
