For a couple days now, all I have wanted is chocolate! This is unusual, since so far during this pregnancy, when I’ve craved sweets, I’ve wanted things like gummy candies, sour candies, and grapes and other fruits. Normally I love chocolate, but it has not been something I’ve really wanted over the past seven (almost eight!) months.
Anyway, I had some extra time on my hands yesterday, and decided that it was time for me to satisfy my craving! Andrew and I have done really well sticking to whole, clean foods, and I did not want to mess that up over a small chocolate craving… especially with my little gestational diabetes scare not too long ago.
I followed both recipes exactly, with the exception of the chocolate chips in the brownies. I did use chocolate chips, but I was VERY conservative with them. Even though these brownies contain clean, natural ingredients, dates have a high glycemic index. Adding lots of chocolate chips would have set me over the edge!
Both the brownie and the frosting are definitely worth making again; however, I will say that the brownie is much more cake-like than brownie-like (in density and texture,) and my frosting was a tiny bit lumpy. If you plan on making the frosting, I’d suggest using a stand mixer. I used an old, cheap handheld mixer, so I’m sure that’s the reason for them lumps!
These recipes are so simple, and I love that the Greek yogurt in both the brownies and the frosting helps balance the carbs with a good amount of protein. All things considered, this is a good choice of treat for those of us with PCOS… As long as we don’t eat the whole pan in one sitting!
