A few weeks ago I posted my “fall baking bucket list.” Since then, Andrew and I have really committed to changing our diets and lifestyles. We have both learned how important what we put into our bodies and what we do with our bodies is to health and wholeness.
So, I had to modify the baking list just a little. Instead of the pumpkin spice KISS cookies I originally posted, I made these. And I must say, they were quite tasty!
- 1/2 Cup natural almond butter (or other nut butter of your choice)
- 1/2 Cup pureed pumpkin
- 1/4 Cup raw honey (or pure maple syrup)
- 1 egg
- 1/2 tsp. vanilla
- 1/2 tsp. baking soda
- 2 tsp. pumpkin pie spice
- 1/4 tsp. salt
- 2-3 Cups shredded coconut, organic dark chocolate chips, seeds, nuts, or mix-ins of your choice. I used coconut only this time, because that is what I had in the pantry.
Preheat oven to 350. Combine all ingredients in a large bowl. Drop by tbs. onto a greased baking sheet. Press down slightly with palm. Bake for 12-15 minutes or until golden brown.
Let them cool completely, because when they first come out of the oven they are a bit mushy. As they cool, they become more firm.
